Café-Style Triple-Layer Cheese Burst Sandwich
This triple-layer cheese burst sandwich delivers an incredibly gooey center right at home. Sweet corn and paneer balance out the rich homemade cheese sauce.
Making a truly great cheese burst sandwich at home comes down to getting the middle layer right. Most people rely entirely on slices of processed cheese and wonder why the result is stiff rather than spilling out when cut.
The answer is a simple homemade cheese sauce. Whisking processed cheese with a little butter and milk over a double boiler takes just five minutes, but it completely transforms the texture. It stays fluid and gooey long after the sandwich comes off the heat.
I build this as a triple decker to contain everything properly. The bottom layer holds a spicy, crunchy mix of paneer, sweet corn, and finely chopped capsicum, which cuts through all the richness. The middle bread slice acts as a dam for the cheese sauce. By leaving a slight margin around the edges of that sauce layer, the heat seals the bread together just enough to stop it leaking into the toaster. It is a brilliant weekend lunch when you want something substantial and indulgent.
Instructions
- Set up a double boiler, placing a large heatproof bowl over a stock pot of simmering water on low heat.
- Make the cheese sauce, whisking 50 g grated cheese, 1 tbsp butter, and milk in the bowl for 5 minutes until smooth.
- Cool the sauce, removing the bowl from the heat and letting it sit until it thickens slightly into a creamy dip.
- Prepare the filling, gently mixing the paneer, corn, capsicum, onion, chillies, sauces, spices, and remaining cheese.
- Build the bottom layer, applying butter to a bread slice and spreading an even layer of the paneer filling.
- Add the middle bread slice, pressing it down gently over the filling to create a sturdy base for the sauce.
- Apply the cheese sauce generously over the middle slice, leaving a 2 cm empty border so it does not drip out.
- Close the sandwich, placing a third slice of bread on top and pressing lightly to seal the edges together.
- Toast the sandwich, applying butter to the outer slices and placing it in a hand toaster over medium-high heat.
- Cook for 3 to 4 minutes per side, until the bread turns crisp and golden brown and the cheese melts entirely.
- Remove from the heat, transferring it to a chopping board to cut and serve immediately while the center is gooey.
Notes
Finely chopping the onion and capsicum is crucial since they go in raw. A finer chop ensures they warm through and soften perfectly in the quick toasting time.
If using a stovetop hand toaster, keep moving it constantly over the flame so the bread toasts evenly without catching on the hot spots of the burner.
You can make the cheese sauce ahead of time and store it in the fridge for up to three days. It will firm up when cold, so gently warm it over a double boiler before assembling the sandwiches.
