Getting that distinct smoky, charred exterior on a seekh kabab without a tandoor usually feels impossible at home. I have tried grilling them, baking them, and even torching them. But a heavy pan on a low stovetop gives the most reliable result. The trick is patience and plenty of basting.

When I first made these, I rushed the cooking time and ended up with a dry exterior before the inside was done. Keeping the flame low allows the chicken mince to cook through gently while the butter in the marinade keeps it moist. You do not need any fancy equipment here, just bamboo skewers and a wide pan. The long marination time is non-negotiable. It helps the mince firm up so it clings to the stick rather than falling apart in the pan. I usually shape these just before cooking, working in small batches to give them enough room to turn evenly. Serve these straight off the pan while they are hot, ideally with a sharp squeeze of lime.

Instructions

  1. Blend the meat, pulsing the chicken mince and all marinade ingredients except oil into a paste.
  2. Chill the mixture, covering the bowl and refrigerating for 2 hours to let it firm up.
  3. Soak the skewers, submerging bamboo skewers in water for 30 minutes so they do not burn.
  4. Form the kebabs, oiling your palms and shaping roughly 70 g portions around each wet skewer.
  5. Smooth the surface, rolling the shaped meat gently on a board for an even finish.
  6. Heat the pan, brushing a wide griddle with some sunflower oil over a low-medium flame.
  7. Cook the first batch, frying half the kebabs for 6 minutes while turning them frequently.
  8. Finish cooking through, dropping the heat to low for 6 more minutes until the inside reaches 74°C.
  9. Baste while cooking, brushing the kebabs with pan oils continuously so the exterior stays moist.
  10. Cook the second batch, repeating the frying and basting process with the remaining kebabs and oil.

Notes

The mixture needs to be genuinely cold before you shape it. If it gets too warm, the meat will not hold onto the skewer and will break apart in the pan.
Always check the internal temperature reaches 74°C (165°F). Minced chicken can look perfectly browned on the outside while remaining undercooked in the centre.
If you do not have bamboo skewers, you can form the meat into long cylindrical logs with your hands and pan-fry them flat. They will still taste exactly the same.
