Getting Hakka noodles right at home is all about managing the heat and prepping ahead. I learned quickly that the secret isn't just the sauces, but the rapid stir-fry over high heat that gives the vegetables a slight char while keeping their crunch. The biggest mistake most people make is overcooking the noodles. Boiling them just until tender, then immediately rinsing them under cold water, halts the cooking process and prevents a mushy, sticky mess.

I find this recipe is worth making when you want a quick, satisfying dinner without reaching for a takeaway menu. Having all your vegetables julienned and sauces measured out before you even heat the wok makes a massive difference. The high heat means everything moves incredibly quickly once the oil goes in. Tossing the drained noodles with a few drops of oil also stops them from clumping together on the counter, making them much easier to mix evenly with the soy and chilli sauces at the very end.

Instructions

  1. Boil the water in a large pot, adding 1 tablespoon of oil and a pinch of salt before dropping in the noodles.
  2. Cook the noodles for 6 to 7 minutes on medium heat, taking care not to overcook them so they retain a firm bite.
  3. Drain the cooked noodles immediately, then rinse under cold water to stop the cooking process and set them aside.
  4. Heat the remaining oil in a large wok, adding the chopped ginger, garlic, and green chilli.
  5. Stir in the spring onion whites and the sliced onion, sautéing everything for roughly 30 seconds.
  6. Add the julienned cabbage, carrot, and capsicum, along with 1/2 teaspoon of salt to help the vegetables soften.
  7. Stir-fry the vegetables for 3 minutes on high heat, ensuring they get slightly tender but remain crisp.
  8. Toss the cooked noodles into the wok, then pour in the soya sauce, tomato ketchup, red chilli sauce, and vinegar.
  9. Mix everything well on high heat for 2 minutes, ensuring the noodles are evenly coated with the sauces.
  10. Sprinkle in the black pepper and the spring onion greens, giving it one final mix before switching off the flame.

Notes

Overcooking the noodles is the easiest way to ruin this dish, so test them a minute before you think they are done.
To prevent the drained noodles from sticking together while you prep the vegetables, toss them with a few drops of oil.
A wide, heavy-bottomed wok works best for Indo-Chinese recipes to maintain the high heat required for a quick stir-fry.
Store any leftover noodles in an airtight container in the fridge for up to two days, and reheat them gently in a pan with a splash of water to prevent drying out.
