I love the distinct smoky flavor of restaurant-style Indo-Chinese noodles, but making them at home always felt like a gamble. They either turned out too mushy or lacked that signature street-cart punch.

After testing out various methods, I learned that the secret lies in preparation and intense heat. Having all the vegetables julienned and the chicken boiled before you even turn on the stove is non-negotiable. The actual stir-frying happens in a flash.

Boiling the chicken separately with just a little salt keeps it tender, while adding the capsicum right at the end ensures it retains its crunch. Tossing the noodles with oil immediately after boiling stops them from clumping. If you prep your ingredients ahead, this fast, fiery wok toss delivers perfectly separated, deeply flavored noodles every single time.

Instructions

  1. Boil the chicken, simmering in salted water for 7 minutes until the thickest part reaches 74°C.
  2. Drain and cool the chicken, shredding it into bite-sized pieces once it is safe to handle.
  3. Boil the noodles for 10 minutes, cooking in plenty of water until just tender but still firm.
  4. Drain and rinse the noodles, running them under cold water and tossing with 1 tsp oil to prevent sticking.
  5. Heat the remaining oil, warming 1.5 tbsp in a large wok or pan on high heat until shimmering.
  6. Fry the garlic, stirring continuously for 10 to 15 seconds until fragrant but not browned.
  7. Sauté the onion, adding the thick slices and tossing on high heat for 30 seconds.
  8. Add the green chillies, stirring vigorously on high heat for another 30 seconds.
  9. Toss in the carrots and cabbage, stir-frying on high heat for 1 minute so they begin to soften.
  10. Mix in the shredded chicken, tossing well so it distributes evenly among the vegetables.
  11. Add the capsicum, stirring for 1 minute on high heat to keep it crisp and vibrant.
  12. Add the boiled noodles, tossing gently to combine without breaking the strands.
  13. Season the dish, pouring in the soy sauce, vinegar, 1/4 tsp salt, and pepper powder.
  14. Toss everything together, stir-frying on high heat for 2 minutes until evenly coated and heated through.
  15. Garnish with spring onions, giving the noodles one final mix before serving hot.

Notes

The most common mistake is mushy noodles. Rinse them thoroughly under cold water immediately after boiling to stop the cooking process, and coat them lightly in oil so they remain separated.

Stir-frying requires intense, sustained heat. If using a standard home stove, use your largest, thinnest pan (preferably carbon steel) and do not overcrowd it, otherwise the vegetables will steam instead of fry.

Ensure the chicken reaches an internal temperature of 74°C (165°F) during the initial boil before you shred it.
