Instructions

  • Make the Magic Sauce: First, let's make that amazing sauce. Grab your blender. Add all the sauce ingredients to it: the birds-eye chillis, red bell pepper, lemon juice, paprika, salt, oregano, chilli powder, oil, garlic, vinegar, black pepper, and the food coloring (if you're using it).
  • Blend It: Pop the lid on and blend everything until it's as smooth as possible. You've just made Peri Peri sauce! Eze-Tip: You can make this sauce up to a day ahead—the flavors get even better as they sit.
  • Marinate the Chicken: Place your cubed chicken breast in a large bowl. Pour that beautiful Peri Peri sauce all over it. Mix it really, really well so every single piece is coated. Cover the bowl and put it in the fridge. This is the most important step: let it marinate overnight, or for at least 8 hours. If you're super patient, up to 2 days is even better!
  • Skewer Time: When you're ready to cook, get your skewers. If you're using wooden ones, make sure you soaked them in water for 30 minutes so they don't burn. Thread the chicken cubes onto the skewers. Don't pack them too tightly, or they won't cook evenly.
  • Get Grilling: Time to cook! You can use an outdoor BBQ or the broiler (the grill setting) in your oven. Place the skewers on the grill. Cook for about 8-10 minutes on the first side.
  • Flip and Finish: Flip the skewers over and cook for another 8-10 minutes on the other side. You want the chicken to be cooked through and have those nice, tasty charred bits on the edges.
  • Make the Extra Sauce: While the chicken is grilling, don't throw away that leftover marinade in the bowl! Pour it into a small saucepan, add the 1/2 cup of water, and bring it to a simmer over medium heat. Let it bubble gently for 5-10 minutes until it thickens up. This makes a delicious, and most importantly, safe-to-eat sauce for serving.
  • Get Saucy and Serve: Check one of the thicker pieces of chicken to make sure it's cooked all the way through (no pink inside!). Take the skewers off the grill and use a brush to paint them with that amazing, thickened sauce you just made. Let them rest for a couple of minutes, then serve them hot!
